Eggplant anyone?

Tonight Jas and I made homemade pizza. We have a routine when we do this, I cut up the veggies and get all the supplies out in an orderly manner while Jas mixes up the crust. I think making a homemade pizza it is a great way to use up most anything I have in the refrigerator so tonight this is how it turned out: Red onion, (from our garden) green pepper, (from my mothers garden) crushed pineapple, tomato, (also from our garden) fresh mushrooms, black olives, taco cheese, motz cheese, peperoni, and last but not least cubed EGGPLANT (from Doc's garden)! Even though Jas fussed when I was preparing the eggplant it turned out to be a great adventure and one I will probably crave from here on out. Go ahead wrinkle your nose but give it a try!
